Having run a wine bar in Paris for many years, Nicolas Carmarans now tends vines on the wild and vertiginous slopes of his remote property in Averyron in Southwest France. Fer Servadou is a native variety, and in Maximus produces a nourishing wine, both light and deep, with top notes of red and black currants and a rustic earthiness.
