Cellar: Fermented with native yeasts. Unfined, unfiltered, very low added sulphur.
Superb volcanic terroir and very old vines (the bug Phylloxera, which decimated European vineyards in the late 19th century never made it to Las Canarias) characterise the best wines of Tenerife. 7 Fuentes is a great introduction - aromatic and juicy with lovely, spicy minerality.
