Grapes: Mainly Palomino with a smidge of Dona Blanca and Godello
Vineyard: Organic
Cellar: Fermented with native yeasts. Unfined and unfiltered. Pinch of sulphur at bottling only.
Old vines at high altitude. The grapes are hand harvested at optimum ripeness and after a five day skin maceration the wimes is aged in a mixture of clay amphora and chestnut barrels. An orange wine with real depth - salty, spicy, with orange and apricot toned fruit and a long finish.
