Cellar: Fermented with native yeasts, unfined, unfiltered, very low sulphur
Veronica Ortega's winemaking is precise and meticulous. Quite is taken from a range of parcels of very old vines. The fruit is de-stemmed and aged in a mixture of clay amphora and old barrels. The wine is smooth, elegant and high-toned, with very pure fruit and spice.
