Pecorino semi-stagionato, a medium matured cheese that is aged for about 2 months. It is made by Emilio Spada with the raw milk from his razza sarda sheep. With its creamy paste and sweet, fruity flavour, is more of a table pecorino than a grating one. That said, it is delicious sliced in a salad or served with baby broad beans as a classic antipasto.
