Pecorino semi-stagionato is a medium matured cheese that is aged for about 2 months and perfect for the table. It is made by Emilio Spada with the raw milk from his razza sarda sheep who graze on organic pastures across both steep Apennine slopes and gentle hills facing the coast. These 2 very different terrains and their different flora give body and variety to the milk and result in a creamy paste and sweet, fruity flavour.
