Like a lot of Italians, Luigi and his brother have a market garden which they run alongside their main business. Here they grow a range of fruit and vegetables including delicious, organic borlotti and cannellini beans and farro. You might think there can't be much of a difference between one dried borlotti bean and another but think again! Luigi's legumes are delicious and are totally worth the long soak and cook. Their silky texture will make a big difference to any dish and they are perhaps at their most delicious in Pasta Fagioli soup. The beans are pureed after cooking and the pasta cooked in their thick liquid. Very easy and very good
