Like a lot of Italians, Luigi and his brother have a small holding which they run alongside their main business of making our fabulous ventricina and salsicce. Here they grow a range of fruit and vegetables including delicious, organically grown borlotti and cannellini beans and farro. Luigi's legumes are delicious and are totally worth the long soak and cook. They will make a big difference to any dish and can be used in minestrone soups and stews, with wilted greens or in the Tuscan summer salad of red onion, tuna, parsley and beans.
