Cellar: Fermented with native yeasts, unfined and unfiltered. Low sulphur.
On the nose you can feel the aromatic varieties, very reminiscent of elderflowers and a bit of jasmine. The palate has more of the pithy bite you’d expect from the maceration, with a lovely lick of acidity to balance everything out.
