Buchette de Manon is made with the creamy milk of an ancient breed of goats called Roves, which thrive over the arid summers in Provence roaming freely in the countryside. Buchette is a lactic-set, hand-ladled cheese, deliberately light on salt in order to allow the perfumed, rich flavours of the Rove milk to shine, with a sprinkling of winter savoury on the rind.
