Gruyere Suisse AOP, matured at the Forts de la Tine, on the Fribourg/Vaud border; producers of this region make a particularly fine, moist, pronounced paste. Its flavour is full-bodied with fruity and often nutty notes. This has just won a gold medal at the world cheese awards.
