Made using free range pork from the Knepp Estate dry rubbed and then air dried over 20 weeks. The Knepp Rewilding Project in West Sussex is a pioneering ecological restoration initiative. Over two decades, abandoned, intensive dairy farmland has been transformed into a dynamic biodiversity hotspot using free-roaming herbivores to drive natural habitat regeneration.
