Our Pyrénées Brebis shares much of the history of an Ossau Iraty one of the first cheeses ever made and is produced in the Basque region of the Pyrenees. Made by a small local co-operative with milks from the mountain farmers, this long aged, hard cheese pairs salinity with a toffee and butterscotch flavour.
