In Touraine, Sauvignon Blanc rules, but much of it is anodyne and forgettable. Unlike this. Christophe Foucher is a radical, zero-zero vigneron, totally uncompromising in his quest to create pure, delicious wines containing grapes and nothing else. He harvests his Sauvignon as late as possible, looking for maximum ripeness. This is his second release of this wine from 2020; the first was aged in tank whereas this spent time in old barrels. It is a little richer than the previous release, with a lovely interplay between opulent, rich fruit, acidity and a touch of oxidation.
