A soft, wrinkly cow’s milk cheese inspired by the French cheese St Marcellin; its rich and buttery flavour sits alongside a light, whipped texture. The milk, from a herd of Montbéliarde cows, is used whilst still warm and the curd is set slowly before being hand ladled into moulds.
