Whin Yeats is Wensleydale produced in the rugged hills of eastern Cumbria rather than the in the cheeses more traditional home of Yorkshire. However, Tom and Clare Noblet's farm is every bit a marginal hill-farm like those where farmhouse dales-style cheeses would once have been made. Mellow and buttery with a hint of mushroom, this cheese ranges from crumbly to more springy in texture.
